For more than 275 years, Wiltons has been synonymous with the finest oysters, wild fish and game – all served with traditional courtesy and style. Based in Jermyn Street, London, the exclusive restaurant has become world-famous for a dining experience that is both unique and highly sought after. As one famous diner wrote: “‘It took me twenty years to qualify for a regular booth table. Given another twenty, I may even muster the courage to read the bill from time to time!”
Director Jason Phillips started his career at Wiltons in 1991 as part of The Savoy Group of Hotels & Restaurants Management training programme. After 7 years working in 5-star hotels and restaurants in London, he returned to Wiltons in 2012.
“Recently we felt that the Oyster Bar would benefit from a refresh which included replacing the banquettes and refurbishing the booths in the restaurant and, after extensive research, we finally chose Penwith,” said Jason. “It was an important and sensitive job and we wanted to create as little disruption and change for our clientele as possible. The Penwith team understood that and we are really pleased with their work.
“Whilst retaining original frames, they’ve replaced the seating to provide additional comfort and generally enhanced what we already had. It is very important that we trust the companies we work with – I can say with confidence that you can certainly trust Penwith.”
